Sometimes my wife hits me with her pans. Would these hurt less since they are copper?

I hope this was a joke. If your wife hits you with her pans you have a bigger problem than hurt less or more. And whoever said copper is a softer metal and will hurt less maybe was hit on the head for real.

You mentioned stainless steel tinned, does that mean these will need to be retinned at some point like the Ruffoni?

Matfer Bourgeat copper cookware is only made with an 18/10 stainless steel interior, I believe you have misread the term "Lining or Lined" as Tinning or Tinned

Do Matfer Bourgeat stainless steel lined copper (2.5mm) pans with cast iron handles have a protective coating on the iron handles like Mauviel does?

I've had a number of these Bourgeat copper pans for at least 15 years now. I've never treated the handles, but have had no rust at all. Don't dishwasher them & allow them to air dry. It's fairly dry here in Minneapolis, so if you live in humid conditions seasoning the handles might be a good idea.
